To buy quality tea is one thing, to prepare it well is quite another.
Here are the five commandments for the teapot :
1 - Use a
filter paper if possible not whitened with chlorate (see the filters for tea from
"Jardins de Gaïa").
2 - Use the right dose of tea, a heaped teaspoonful per cup.
3 - Procure if possible a kettle with a thermostat. The right water temperature has to be respected, indeed the water must never be poured boiling onto the tea leaves. That burns and destroys the aromatic molecules that they contain. Water just beginning to boil :
90°C for black tea, oolongs, rooibos and herbal teas. Water just beginning to simmer :
80°C for green and white tea.
4 - Use good water, it is essential if you want to appreciate all the finesse of the tea. You have to have either filtered water, or very lightly mineralised bottled water.
5 - It is indispensable to respect the
brewing time according to the type of tea being prepared (the most simple is to use a timer). The basic infusion time is
3 minutes just like for soft boiled eggs.
Many people say that they don ‘t appreciate green tea quite simply because they let it brew for too long and, well, the ideal length of brewing time for
green tea must not be over three minutes, otherwise it becomes too bitter or astringent. Over three minutes, black tea will become strong, in fact too strong.
Certain types of tea can need more than three minutes to brew such as
white tea and in particular
"Avec les anges" (With the Angels) from "Jardins de Gaïa" that can be left to brew for
8 minutes to obtain the quintessence.
